Amazing Mousse Cakes & Desserts

​In this broad course, that’s full of cutting edge recipes, techniques and skills, you’ll master the art of working with chocolate mousse and create unbelievable cakes, desserts, and petit-fours. You’ll learn how to use mousse and recipes and decoration elements to create simple and elaborate cakes and desserts in any size and shape that fit pretty much any occasion.

We’ll use many different recipes and techniques to create textures and colors on the cakes and desserts as well as intriguing flavor combinations inside their the layers. We’ll start the class by learning how to make stunning individual mousse desserts in any shape you like.We’ll fill these desserts with all sorts of decadent supersizes and airbrush them to create a velvety texture of chocolate. You’ll also learn how to serve, decorate and plate the mousse desserts, and work on several unique and impressive designs, including serving them as bite-sized petit-four desserts.

We’ll then move on to working large mousse cakes, and cover classic and modern presentations alike. First we’ll work on classic layered cakes and explore 2 ways to decorate them using simple yet impressive elements that you can easily make st home. You’ll also discover how to create modern mousse cakes in various shapes and cover them with a decorated chocolate shell. These modern-looking mouse cakes are very unique and simply gorgeous to look at.

During the class you’ll master many recipes and techniques such as the making of various mousses, flavored ganaches, fruit sauces, crispy nougatine cookies, light and airy sponge cake, caramelized and spiky hazelnuts and more… You’ll be able to use these skills and recipes and many of your future baking and decoration projects!
